Countless numbers of us, on a daily basis, are faced with the challenge of filling multiple roles. We must be spouses, parents, professionals, etc., and still find time and energy after all that to be health-conscious individuals! Life shouldn't be an exhausting struggle, it should be a collection of one enjoyable, memorable, fulfilling, experience after another, should it not? I mean, pardon the cliché, but life's too short to let it be anything else.

I am a self-proclaimed food hobbyist on a quest to find delicious, healthy, fast, easy-to-make recipes and to successfully make those food adjectives actually belong together in a sentence. I am looking for after work meals that don't come out of a can, that I can enjoy preparing after a long work day, that my family will enjoy eating, and that will allow me to rest assured knowing that we are eating healthy. When I find these meals, I wish to share them with others. Cheers :)

Jig's Dinner - A Newfoundland Tradition

Happy Thanksgiving Day to all!!! Ummmm....this calls for some quality time in the kitchen, quality time with family and friends, and my traditional holiday dinner - Jig's Dinner!


Jig's dinner is a traditional meal still commonly served on Sundays and holidays in many regions around my home province of Newfoundland, and in the homes of Newfies abroad like myself!! :)

Jig's dinner is quite a large production, and is typically comprised of a combination of Roasted stuffed turkey or chicken, or roast beef, and boiled dinner.

I just love preparing Jig's Dinner. There's something about donning one of the many homemade aprons from my mom, being home working in the kitchen all day, following in the footsteps laid by my mother, grandmothers, great grandmothers etc. over the decades, enjoying quality time with my family, and enjoying the warm atmosphere of my home as the aromas of the turkey roasting in the oven and the jig's dinner on the stove fill the air. It warms the cockles of my heart and fills me with joy! :)

Phase 1: Roasted Stuffed Turkey:

1 5-10 kg turkey (1 - 1 1/2 lbs per person)
1 chopped onion
2 McCormick's Chicken Boullion cubes
Salt and Pepper


Make Dressing: (referred to as stuffing by "mainlanders")

6+ cups of breadcrumbs (done in a food processor using old bread or rolls, I usually accumulate bread over the year by keeping the heels of loaves, and I use any unused burger and dog buns leftover from the summer bbq season)
1 large finely chopped onion
1 cup melted butter/margarine
Water as needed to moisten so that stuffing can just be formed into a ball with little crumbling
4-6 tbsp Savory*





*The savoury is unique to eastern Canada. In Newfoundland, it's grown at Mt. Scio farm in St. John's. Other farms on the east coast also grow it. I cannot find the same type of savoury anywhere outside the east coast (except at NF stores). I've purchased savoury in ON at supermarkets and at the Bulk Barn, but it doesn't have the same taste or texture as the east coast savoury at all, so I stock up on this whenever I go home, or else I have someone back east send me some in the mail :) thanks mom ;)


Spray a roasting pan with cooking spray (this will really help with the clean up later)



Sprinkle the chopped onions and crumbled boullion cubes around the outer perimeter of the pan



Remove the wrapping from the turkey and rinse the inside and outside of the turkey

Remove the bag of organ meats from the inside of the turkey (or it may be hidden under the pope's nose lol - I once forgot to look here for the sack, and cooked the turkey with it left in, it was pretty funny to find the little bag of organs left inside when I was carving the bird)

Place turkey in the pan

Stuff the turkey with the dressing, cover opening with a piece of foil tucking edges inside the opening

Bind the legs with twine

Sprinkle top of turkey with salt and black pepper

Add water to pan so that 1/4 - 1/3 of the turkey is submerged



Cover the roasting pan



Roast at 350F until a meat thermometer registers 180F in the breast

(Baste turkey and check water level periodically throughout cooking to ensure it doesn't go dry)

Phase 2: Boiled Dinner:

Ingredients:

Salt Meat**
1 large head of cabbage quartered
2-3 turnips peeled and cut in semi-circles (I didn't do turnips today)
Carrots peeled (# as necessary)
Russett potatoes peeled (# as necessary)
Sweet potatoes (optional in addition to or instead of turnip - my husband hates turnip, my family loves it so I usually do both)
Turnip greens {the tops of the turnips-can be purchased frozen at NF stores, but we're out of luck if we want fresh turnip greens outside NF :( I couldn't get any for today}
Peas Pudding***
Lassy Duff**** (or blueberry duff) (optional - I did lassy duff today)

**Salt meat (pickled beef or salt riblets) can be purchased at Loblaws supermarkets. I commonly use the Naval beef which comes in a bucket of brine, and has a picture of NF on it








Condiments usually served with Jig's Dinner:
Sweet mustard pickles
Pickled Red Beets
Bread and Butter Pickles
Gerkin Pickles
Jellied Cranberry Sauce


Trim as much of the fat from the salt meat as possible


In a large boiler filled approx. halfway with water, boil the salt meat for an hour or so, then pour off about 2/3 of the water, top up with fresh water (to remove some but not all of the salt)

While desalting the salt meat, prepare peas pudding and duff.

***Peas Pudding

The night before, place approx. 1 1/2 cups of split yellow peas in room temp. water and let soak overnight. Transfer the soaked peas into a pudding bag (cheesecloth bag open at one end like a pillowcase). Tie top of bag tightly with string, leaving room in the bag for peas to expand. The pudding must cook with salt meat for approx. 4-6+ hours. The salt meat water infuses the pudding, and makes a BEAUTIFUL flavor.


****Lassy Duff

Ingredients:


1/2 cup sugar
1 tsp cinnamon
1 tsp ground cloves
1 tsp all spice
1 cup Crosby's Fancy Molasses




Mix by hand (do not use electric mixer for duff batter)

Dissolve 1 tsp baking soda in 1/2 cup HOT water

Add to ingredients and mix

Add 1/2 cup melted butter and mix





Add 3 cups flour and mix



Add 1 cup chopped dates and 1/4 cup raisins and mix



Transfer batter into a pudding bag and tie at the top with string leaving room for duff to expand.



Once the water has been changed on the salt meat, add the pudding bags and bring to a boil again, let boil for approx. 3 hours to give the puddings a head start as they take longer than the veggies to cook. Top up the pot with water as necessary....let the AROMA production begin UMMMMMMMM!!!!



Add carrots  and turnip to pot at least 90 minutes before turkey will be finished

Add cabbage and sweet potatoes about 45 minutes before turkey is ready

TIME TO SERVE!!

When turkey is cooked, set on serving platter, remove foil that had been covering the dressing, place back in oven on low heat to keep warm while preparing the boiled dinner, cover with foil so it doesn't dry out

Make Gravy: Pour the drippings into a tall slender vessel and skim as much fat from the top as possible. Transfer into a sauce pan, bring to a boil, add 2-3 dashes of gravy browning, bring to a boil and thicken with flour thickener (in a container with a tight lid, add 1/2 cup cold water, 1/2 cup white all purpose flour, shake aggressively to ensure there are no lumps, pour gradually into boiling drippings stirring constantly until desired thickness is reached), reduce heat




Before thickening give gravy base a taste test, adding the thickener may dilute the flavor, so you may need to add some dry chicken stock for flavor (the gravy base should be quite flavorful because again, the thickener dilutes it a bit)




Remove boiler from stove (by now it shuld have been boiling for approx. 6 hours)

Fish out salt meat, and all vegetables and pudding bags, and place each in their own serving bowl/platter

Place cabbage in a collander sitting in a bowl and let drain. Chop the cabbage and place in a serving bowl

Mash turnip and sweet potato (not together) with butter, smooth with a spoon and sprinkle top with black pepper

Mash russett potatoes with butter and milk, then whip at high speed with mixer, smooth top over with a spoon for presentation

Peel back the peas pudding bag, dumping peas pudding into a bowl, mash peas and stir in approx. 1/3 cup of butter, smooth top with spoon and sprinkle with black pepper.




Peel back the lassy duff pudding bag taking care not to break the duff. Place the duff on a serving plate, and slice into 1/2" slices. The duff is not a dessert for most people, it is served on the dinner plate and eaten with gravy along with the meat and vegetables

Present the spread, and ENJOY!!!!

Steak Enchiladas with Spanish Rice

Ever have a big BBQ and have lots of left over steak? Well I did this week, and I have a great idea of something you can do with that steak.

Just roll 'em up in a tortilla, spread some smoky salsa over top with some jack cheese, melt in the microwave, throw on a dollop of guacamole and sour cream and serve with a side of yummy spanish rice, and nachos, and voila a Mexican fiesta. No boring reheated leftover steak here!



Guacamole

5 ripe avacados
1 lemon (juiced)
1 lime (juiced)
3 cloves garlic minced
1 tbsp ground cumin
salt and black pepper to taste

1) Peel, pit, and mash avacados

2) Add lemon and lime juice and mix

3) Add garlic, cumin, salt and pepper

4) Using an immersion blender, blend until you reach a creamy consistency



Spanish Rice

This I adopted from a Weight Watchers recipe.

2 cups long grain white rice
1 onion chopped
3 cloves garlic chopped
1 red pepper chopped
3 tbsp EV Olive Oil
1 can Italian seasoned diced tomatoes
1 jar Herdez Brand Mild Salsa (drained)
2 tsp saffron threads finger crushed
Approx. 20 green olives with pimentos
1 can sliced black olives
1 cup canned or frozen green peas
Juice from 1 lemon
Fresh Cilantro finely chopped (1/4 cup)
Salt and Black Pepper

1) Steam rice

2) Saute Garilc, onion, and red pepper until tender, reduce heat to medium-low



3) Stir in saffron threads, tomatoes, drained salsa, green and black olives, peas, lemon juice, and ~2 tbsp of the cilantro

4) Add cooked rice and mix



5) Add salt and pepper to taste

6) Reduce heat to low



7) After plating, sprinkle more fresh chopped cilantro over top


Enchiladas

10" Tortillas
BBQ'd steak thinly sliced
PC Brand Smoky Chipotle Salsa
Pasta sauce
Shredded Monterey Jack Cheese
Sour Cream
Guacamole

1) Mix Pasta Sauce with Salsa in a 1:2 ratio (Salsa alone is too wet)

2) Spread a strip of salsa mix over middle of tortilla (~2 tbsp.)

3) Arrange sliced steak in middle of tortilla



4) Roll and arrange on plate

5) Spread 2-3 tbsp of salsa mix over top, along with jack cheese



6) Heat in microwave until cheese is melted

7) Place a dollop of sour cream and guacamole over top


Arrange enchiladas on a plate, heat in microwave, then plate the rice, and the nachos with sour cream &/or guacamole for dipping.
Sprinkle cilantro over entire plate to garnish.

Heisenburger Sliders!

Heisenburger sliders - guaranteed to be a huge hit at any BBQ, these little gems pack a HUGE punch of flavor. They have been a summer favorite for us this year.

The recipe and name was conceived by my lil sister....the name was inspired by our favorite TV series right now...."Breaking Bad". The main character's alias is Heisenberg, and the name of these little burgers has become commonplace in our family.

Ironically, Heisenberg was one of the most important physicists of the 20th century and is most famous for his uncertainty principle-highly relative to Walt's life in Breaking Bad, but not so relative to our little Heisenburgers, as there is no uncertainty here with respect to their taste!! Nonetheless, this is what we call them!

I prefer the sliders, presented here, but my sister likes to make them full size and serve them on a nice crusty kaiser bun....also YUMMMMY!!

Ingredients:



Burger Patties:
2 lbs Ground Chicken
3 cloves finely chopped garlic
10-12 dashes Worcestershire Sauce
2 eggs
1 cup finely ground soda crackers
2 tsp ground mustard
1 tsp white pepper
Salt & Black Pepper to taste

Toppings:
Grated Mozzarella Cheese
Carmelized Onions
Mayonnaise
Hot Dijon Mustard
*NOTE: The mustard can make or break the flavor combination. Our favorite brand is Kozlik's (hot garlic flavor), available at a variety of locations including St. Lawrence Market, The Village Grocer, Longos, and other fine food establishments.

24 Mini Hamburger Buns



1) Combine all ingredients listed for the patties well, by hand, and form into small flat patties

(it's best to flatten patties using a chopping motion with the side of your hand)

(patties shouldn't be much bigger then the palm of your hand)

2) Chop 3-4 onions. In a non stick covered sauce pan saute over med-high heat in butter with a little salt until golden brown (approx 15 minutes), set aside.



3) Grill patties on the BBQ until cooked (approx. 10-14 minutes, 5-7 minutes each side)




4) Remove patties from grill, placing them on a large cookie sheet



5) Sprinkle grated mozzarella over top of the patties and melt in oven (350F for 7-8 minutes)


6) Toast buns over grill



7) Assemble burgers with carmelized onions, mayonnaise, and mustard

8) Arrange on a serving platter



9) Serve and Enjoy!!

Hello Again!!!

Hello everyone....it feels great to be back!! I have had an extremely busy summer with work, vacations, family visits, and other functions....and I spent most of the summer getting through my first trimester...yes, we are expecting our 2nd baby, due to arrive in February!! We're very excited!

You all have heard of the first trimester blahs I'm sure, well with working long hours in the particularly hot humid weather we have had this summer, and with all that's been going on, I had 'em BAD!! I just havn't had it in me to stay up past my daughter's bedtime to tend to my blog....but these days I'm feeling much more energetic so here I am!!

At least I've had time to think of some ideas for future posts, so hopefully there'll be some neat ones to come!

Looking forward to getting back into my normal routine!!

Karen's "Pepperoniless" Pizza

I wanted pizza a few nights ago for dinner, but didn't feel like a greasy pepperoni pizza, which if I'm gonna do, I'm gonna go full tilt and do the bacon, sausage, extra cheese, etc., but I was feeling like behaving myself and I was in the mood to concoct so here we go.....

Ingredients:

Crust:

Store bought pre made thin crust whole wheat pizza crust (yes I wimped out on the crust....didn't feel like making my own today, and this was a healthy easy alternative)

Toppings:

Pre made store bought pizza sauce (hehe ummm...wimped out again *looking down, scuffing foot on ground*)
2 skinless boneless chicken breasts cut roughly into 1/2 inch cubes
1 cup extra lean kolbassa diced
1 cup sliced black olives
1/2 cup sun dried tomatoes (soak in hot water for ~ 15 min, and chop)
1/4 cup red onion finely chopped
2 cups low fat feta diced
2 cups low fat mozzarella grated



There were enough toppings for 2 pizzas, so I made 2 and enjoyed it for lunch all week :)

Prep all toppings

Saute chicken in basil and salt and pepper to taste



Arrange toppings on pizza (photo was taken before mozza went on)



Bake at 350F for 15-18 minutes



Voila!



I served this with a side of cesar salad:

Cute Story:

When I served this pizza to my little cutie-pie 3 year old, she said "Ummmm!! Pizza!" Then she looked at it, picked the toppings off as per her usual routine, and with a confused look that was bordering on panic she asked me "Mommy?!? Where's the pepperoni??" hahaha...poor kid felt cheated, but after some reassurance and persuasion she loved it and asked for seconds ;)

Sweet and Sour Meatballs

I had no idea what I wanted for dinner tonight but I knew I felt like something meaty, and tangy, and for a change, I actually had time to experiment!

What did I come up with? Meatballs with an Asian flair, in a tangy sweet and sour sauce, served over a bed of basmati rice....ummmm....deeelish! I also prepared the meatballs in the oven as per my mother's suggestion to expedite the cooking process. In the past, I would pan fry my home made meatballs, which took FOREVER, but this was sooo much easier and faster, and that's what I'm all about when it comes to cooking....big bang for your buck, small effort, big result! This turned out so good that I wrote everything down so I can reproduce what I did in the future (and share it with you here) :)

Ingredients:

Meatballs:

1 lb lean ground beef (or pork)
2 eggs
2 tbsp ginger grated
3 cloves garlic finely chopped
1/4 cup ketchup
1 1/2 cups bread crumbs
2 tbsp worcestershire sauce
1 tbsp liquid beef bouillon
1 tbsp soya sauce (after thought - not shown in photo)
3 tbsp sesame oil (after thought - not shown in photo)
2 tbsp finely chopped parsley (after thought - not shown in photo)
1 tbsp ground mustard
2 tbsp dijon mustard (after thought - not shown in photo)
1 tsp black pepper

Sauce:

3/4 cup chopped red bell pepper
3/4 cup chopped green bell pepper
3/4 cup diced pineapple
1 medium onion diced
3 cups VH Sweet and Sour Sauce
3 tbsp EVOO
1 tsp salt



1) Prepare Meatballs

Mix all ingredients thoroughlly by hand in a large mixing bowl.

Form into meatballs (approx. 1 inch diameter).

Arrange on a non stick cookie sheet.



Bake at 375F for 20-25 minutes (in convection oven, may need longer in non convection oven). Cut 1 meatball in half, if center is browned and steaming hot, and meatball is slightly firm to touch, it is cooked.



2) Start to prepare sauce while meatballs are cooking

Saute onion, red and green peppers until tender, salt to taste



3) Arrange meatballs with sauce in casserole dish

Spray bottom and sides of a casserole dish with cooking spray

Place meatballs in a casserole dish



Add sauteed veggies and pineapple

Pour sweet and sour sauce over top

Gently shift meatballs around to let sauce and veggies fill in spaces between meatballs, be careful not to break the meatballs when doing this



4) Bake meatballs in sauce

Cover casserole dish and bake at 375-400F for 30 minutes





5) Serve over basmati rice and enjoy!!!

Penne A La Vodka

I spent a wonderful evening with my sister and her hubby this evening. Since there was rain in the forecast, for dinner we decided against a BBQ and wine by the fireplace, and decided to prepare an 'indoor' dish my lil sis had learned from a gourmet chef at a recent teacher's conference...Penne a la Vodka...ummmmm!!

It was my first time preparing this dish, but with my sister's direction, it was unbelievably easy, and delicious! We paired it with a wondeful Pinot Grigio - a perfect match!

Ingredients:

Penne Pasta
4-5 tbsp EVOO
3 cloves garlic finely chopped
6-7 green onions diced
2/3 cup pancetta diced
1 tbsp Italian seasoning mix
3 cups pasta sauce
3/4 cup 18% cream
approx 30 mls vodka



1) Boil penne noodles to desired tenderness while preparing sauce

2) Saute garlic, green onion, and pancetta in EVOO on high heat until cooked (garlic golden, pancetta browned throughout), be careful not to burn the veg






3) Tip pan so that all oil and vegetables slide to one side

4) Pour vodka over hot oil and vegetable mix, ignite with a lighter and flambe




5) Once flame has died, reduce heat to medium and add pasta sauce, bring to a simmer

6) Gradually add cream, stirring constantly until blended to create a nice rose sauce




Comme Ça :


7) Drain penne noodles, and mix sauce with pasta



8) Add fresh grated parmesan cheese over top, and voila - Penne a la Vodka! This was so good my 3 year old asked for seconds!!
